4-5 Carrots washed and grated finely.
1-2 Green Chillies (or as per your taste.) cut into pieces
1/2 cup roasted and coarsely ground Peanut (groundnut) powder
Finely cut Coriander Leaves for garnishing.
2-3 tablespoons of Lemon Juice
2 spoons grated Coconut (optional)
1/2 tsp Sugar
1/2 tsp Veg. Oil
1 tsp Mustard seeds
4-5 Curry Leaves
1/2 tsp Asafoetida(Hing)
Salt as per taste
1. Mix carrots, lemon juice, sugar, green chillies, coriander leaves, peanut powder.
2. Season with mustard seeds, hing, curry leaves in oil. Let it cool in fridge. Add salt.
3. Carrot Salad is ready to be served.
