1 cup broccoli, cut into small florets
1/2 cup onion, thinly sliced
1 large clove garlic, chopped
1/2 cup carrots, thinly sliced
2 tablespoons chopped celery
1 tablespoon pasta
1/4 cup sun-dried tomatoes,
1 tablespoon olive oil or butter
4 tablespoons grated parmesan cheese – For Serving
Salt and black pepper - to taste
1. Heat the olive oil in a pan, add the onion, garlic, carrots and celery and sauté for 2 to 3 minutes.
2. Add broccoli, pasta, salt and 2 1/2 cups of hot water and simmer till the pasta has cooked.
3. Add the sun-dried tomatoes and pepper and mix well.4. Serve hot broccoli soup with the parmesan cheese.
