Indian Food Recipes -> Raj Kachori recipe

Ingredients  for Raj Kachori:

1 tablespoon refined flour (maida)    
1 cup Semolina (suji) 
1/4 teaspoon Red chilli powder    
Salt - to taste
Oil  to deep fry

For Filling    

2 medium -  potatoes, boiled - cut in cubes  
1/2 cup Chickpeas (kabuli chana), boiled  
1/2 cup sprouted Moong   
10-15  papdi    
1 cup - Thick Yogurt  
4 Dahi bhalle (lightly mashed)  
1 teaspoon - Roasted cumin powder    
1/2 teaspoon Rock salt (sendha namak)   
1 teaspoon Red chilli powder    
4 tablespoon - Tamarind chutney    
2 tablespoons - Green chutney    
1/2 cup Fine Sev    
1/2 bunch -Cilantro leaves- chopped
 
Method to make Raj Kachori:
 
1. Make dough of suji, maida, red chilli powder and salt by adding water to it. Take a small part of dough to make a ball and then with a rolling pin, roll into round shape of  4-5 inches diameter size.
2.Deep fry in oil on medium heat, turn both the sides while frying, till well puffed and crisp.Take it out and cool.
3. Dip the papadi in Yogurt.Take kachori in serving plate. Make a big hole in the centre. Fill with potato cubes, sprouted moong, boiled chana, papdi dipped in yogurt and mashed dahi bhalle in it.
4. Sprinkle roasted cumin powder, rock salt powder, red chilli powder, tamarind chutney, yogurt, green chilli chutney, sev and cilantro leaves.
5. Raj Kachori is ready to be served.
